When you buy the kiwifruit and it is still firm, it is important to let them ripen at room temperature. A ripe kiwi should give away to slight pressure like a ripe avocado. Once the kiwi is ripe, it can be kept in the refrigerator; for about 2 weeks. When you want to slow down the ripening process you can put the kiwifruit in the refrigerator separated from other fruit. If you want to speed up the ripening process, store the kiwifruit at room temperature, in a paper bag with other fruit, like bananas or apples.
